Homemade Granola with Peaks Island Honey

Bill and I just returned from a long weekend on Peaks Island in Maine.  This weekend was a treat for a couple of reasons.  Bill did all the planning for meals, packed the bags and met me at the door when I came home from work. We were rewarded with beautiful weather, incredible food and a peacefulness that only comes after the summer season has ended on the island.

We did a lot of exploring both on foot and on a rented bicycle built for two!  The tandem bike was great fun particularly because of the all the smiles it generated from those we passed on our ride around the island.  One day, at the end of a road leading directly into the ocean, we discovered a little table loaded with jars of Peaks Island Honey.   One feature of almost all Maine Islands is an abundance of shrub roses and we could only imagine how this might impact the flavor of the honey made on Peaks.  This discovery was all the inspiration I needed to come home and make some honey granola.

Peaks Island Honey Granola

3 cups oats
1 cup chopped almond
1 cup gently chopped pecans
1/3 cup Peaks Island Honey
1/3 cup Brown Sugar
1/4 cup canola oil
1/2 tsp salt
1 tsp powdered vanilla (or vanilla extract)
1 - 2 cups mixed dried fruit (raisins, cherries, apricots (chopped), cranberries...

In a large mixing bowl combine oats, almonds, pecans, powdered vanilla and brown sugar.  Set aside.  In a second bowl combine honey, canola oil, salt and if using vanilla extract put that here too.  It may help to heat this slightly in the microwave to combine the honey and oil.  Pour the honey mixture over the dry ingredients and mix thoroughly.  Bake at 225 - 250 degrees for approximately 1 hour until golden brown - taking care to stir the granola approximately every 15 minutes to prevent burning and bring to a nice golden brown color.  Cool for approximately 10 minutes and then fold in the fruit.  After mixture has cooled thoroughly store in airtight container.  This granola is delicious over greek yogurt (my favorite is Chobani Vanilla).

  2. Yes you make a left at the top of the ferry road onto Island and then instead of bearing right at the end you go left. There is a boat launch at the end too. There is an address on the bottle "32 Evergreen Ledge"
